Preheat your oven to 400°F and trim the tough, woody ends off the asparagus spears.
Place asparagus on a baking sheet, drizzle with half of the melted ghee, and sprinkle with a pinch of sea salt and black pepper.
Roast the asparagus for 12-15 minutes until tender and slightly charred at the tips.
While the vegetables roast, pat the sirloin steak completely dry with paper towels to ensure a perfect sear.
Season both sides of the steak generously with the remaining sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat, add the remaining ghee, and sear the steak for 3-4 minutes per side for medium-rare.
In the final 2 minutes of cooking, add the smashed garlic cloves, rosemary, and thyme to the pan and baste the steak repeatedly with the infused ghee.
Transfer the steak to a cutting board to rest for 5 minutes before slicing against the grain and serving with the roasted asparagus.
