Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes with garlic-sautéed green beans, featuring a perfectly crisp skin.
INGREDIENTS
6 oz Salmon Fillet
150g Sweet Potato
125g Green Beans
1 tsp Ghee
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and dice the sweet potato into small cubes, then boil in water for 10-12 minutes until tender.
Drain the potatoes and mash them until smooth, adding a pinch of sea salt if desired.
While potatoes boil, trim the green beans and mince the garlic.
Heat ghee in a skillet over medium heat, add the green beans and garlic, and sauté for 5-7 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat olive oil in a separate non-stick skillet over medium-high heat.
Place salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until cooked through to your preference.
Plate the sweet potato mash, top with the salmon, and serve the garlic green beans on the side.
