Chicken and Broccoli Stir-Fry
Sautéed chicken and crisp broccoli florets tossed in a savory ginger-tamari glaze, served over fluffy brown rice for a satisfying and vibrant meal.
INGREDIENTS
5.5 oz Chicken breast
1.5 cup Broccoli florets
0.5 cup Red bell pepper
0.5 tbsp Avocado oil
1 tsp Toasted sesame oil
1.5 tbsp Tamari
1 tsp Fresh ginger
1 clove Garlic
0.5 cup Cooked brown rice
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Sesame seeds
PREPARATION
Dice the chicken breast into bite-sized pieces and season evenly with sea salt and black pepper.
Heat the avocado oil in a large skillet or wok over medium-high heat until shimmering.
Add the chicken to the pan and sear until golden brown and cooked through, approximately 5 to 7 minutes.
Remove the cooked chicken from the pan and set it aside on a plate.
Add the broccoli florets and sliced bell peppers to the same pan with a small splash of water, covering with a lid for 2 minutes to steam-soften.
Remove the lid and stir in the minced garlic and grated fresh ginger, sautéing for 1 minute until fragrant.
Return the chicken to the pan and pour in the tamari and toasted sesame oil.
Toss all ingredients together for 1 to 2 minutes until the savory sauce coats everything evenly.
Serve the stir-fry immediately over the warm cooked brown rice and garnish with sesame seeds.
