Seared Cod Fillet with Garlicky Spinach
Pan-seared cod seasoned with sea salt and black pepper, served over a bed of wilted spinach and fragrant toasted garlic.
INGREDIENTS
6 ounces Cod Fillet
2 cups Fresh Spinach
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Pat the cod fillet completely dry with a paper towel and season both sides with salt and black pepper.
Heat a non-stick skillet over medium-high heat with half of the olive oil.
Sear the cod for approximately four minutes on each side until the fish is opaque and flakes easily with a fork.
Transfer the cod to a plate and add the remaining oil and minced garlic to the skillet.
Sauté the garlic for thirty seconds until fragrant then add the fresh spinach to the pan.
Stir the spinach constantly until it is just wilted and vibrant green.
Plate the cod over the bed of garlicky spinach and finish with an optional squeeze of fresh lemon.
