In a medium mixing bowl, combine the cooked pasta, browned turkey, Greek yogurt, and shredded cheddar cheese, stirring until the mixture is thick and well-incorporated.
Place the bowl in the freezer for 20 minutes to allow the mixture to firm up, making it easier to handle.
Once chilled, scoop the mixture and roll into 4 or 5 uniform balls.
Whisk the egg white in a small bowl and place the panko breadcrumbs in another. Dip each ball into the egg white, then roll in the panko until evenly coated.
Heat the avocado oil in a skillet over medium-high heat. Add the balls and shallow fry for 2-3 minutes per side, rotating carefully until all sides are golden brown and crispy.
