Heat the extra virgin olive oil in a large cast-iron or non-stick skillet over medium-high heat.
Add the ground turkey sausage to the skillet, breaking it into small crumbles with a wooden spoon or spatula.
Cook the sausage for 5-6 minutes until browned and cooked through.
Add the diced yellow onion and red bell pepper to the skillet, sautéing for 4-5 minutes until the vegetables are tender and slightly caramelized.
Stir in the sea salt, black pepper, garlic powder, and smoked paprika to evenly coat the meat and vegetables.
Add the fresh baby spinach and stir for 1 minute until the leaves are just wilted.
Use the back of a spoon to create two small wells in the sausage and vegetable mixture.
Carefully crack one egg into each well.
Reduce the heat to medium-low, cover the skillet with a lid, and cook for 3-4 minutes until the egg whites are opaque and set, but the yolks are still runny.
Remove from heat and serve immediately directly from the skillet.
