Garlic Parmesan Chicken Alfredo Pasta
Pan-seared chicken breast tossed with whole grain pasta in a velvety garlic-parmesan yogurt sauce, finished with a handful of vibrant baby spinach.
INGREDIENTS
4.5 oz Chicken breast
2 oz Whole grain penne pasta
2 whole Garlic cloves
0.25 cup Plain Greek yogurt
2 tbsp Grated parmesan cheese
1 tsp Extra virgin olive oil
1 cup Baby spinach
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh lemon juice
PREPARATION
Bring a large pot of salted water to a boil and cook the whole grain penne according to package directions until al dente.
Reserve 0.25 cup of the starchy pasta water before draining the noodles.
Season the chicken breast with sea salt and black pepper on both sides.
Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes per side until golden and cooked through.
Remove chicken from the pan, let it rest for 3 minutes, then slice into thin strips.
In the same skillet, reduce heat to low and add the minced garlic, sautéing for 30 seconds until fragrant.
Whisk together the Greek yogurt, parmesan cheese, and the reserved pasta water in a small bowl until smooth.
Add the yogurt mixture to the skillet, stirring constantly on low heat to prevent curdling.
Toss in the cooked pasta and baby spinach, stirring until the spinach is wilted and the pasta is coated in the sauce.
Return the chicken to the pan, drizzle with fresh lemon juice, and serve immediately.
