Fresh Shrimp and Avocado Summer Rolls
Sautéed shrimp and creamy avocado slices wrapped in delicate rice paper with crisp vegetables and served with a savory, nutty dipping sauce.
INGREDIENTS
7 oz Large shrimp
3 whole Rice paper wrappers
0.25 whole Avocado
0.5 cup Cucumber
0.5 cup Carrots
2 whole Butter lettuce leaves
0.25 cup Fresh cilantro
0.25 cup Fresh mint
1 tsp Almond butter
1 tbsp Tamari
1 tsp Lime juice
0.25 tsp Fresh ginger
1 tsp Coconut oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Heat coconut oil in a skillet over medium heat and sauté shrimp with sea salt and black pepper for 2-3 minutes per side until pink; slice shrimp in half lengthwise.
In a small bowl, whisk together the almond butter, tamari, lime juice, and grated ginger until the dipping sauce is smooth.
Fill a shallow dish with warm water and submerge one rice paper wrapper for about 5-10 seconds until it begins to soften.
Lay the wrapper flat on a clean surface and place a portion of lettuce, shrimp, avocado, cucumber, carrots, cilantro, and mint in the center.
Fold the bottom of the wrapper over the filling, tuck in the sides, and roll tightly to seal.
Repeat the process for the remaining wrappers and serve immediately with the prepared dipping sauce.
