Ahi Tuna Hawaiian Poke Bowl
Fresh ahi tuna cubes marinated in a savory tamari-ginger glaze, served over a bed of fluffy brown rice with creamy avocado and crisp vegetables.
INGREDIENTS
4 oz Ahi tuna
0.25 cup Brown rice
0.13 whole Avocado
0.25 cup Edamame
0.5 cup Cucumber
1 tbsp Tamari
0.5 tsp Sesame oil
0.5 tsp Ginger
1 tsp Green onion
0.5 tsp Sesame seeds
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Cook the brown rice according to package instructions and set aside to cool slightly.
Pat the sushi-grade ahi tuna dry with a paper towel and cut into uniform 1/2-inch cubes.
In a small glass bowl, whisk together the tamari, sesame oil, freshly grated ginger, sea salt, and black pepper.
Add the tuna cubes to the marinade, tossing gently to coat every piece, and let it marinate in the fridge for 5 minutes.
Thinly slice the cucumber into rounds and pit the avocado to slice it into thin wedges.
Place the cooled brown rice in the center of a bowl and arrange the marinated tuna, cucumber slices, avocado, and shelled edamame on top.
Garnish the bowl with thinly sliced green onions and a sprinkle of toasted sesame seeds before serving immediately.
