Chicken and Egg Fried Rice
Sautéed chicken and fluffy eggs tossed with nutty brown rice and vibrant vegetables in a savory, ginger-infused tamari sauce for a satisfying meal.
INGREDIENTS
4 oz Chicken breast
2 large Eggs
0.5 cup Cooked brown rice
0.25 cup Frozen peas
0.25 cup Diced carrots
1 tsp Toasted sesame oil
1 tbsp Tamari
1 clove Garlic
0.5 tsp Fresh ginger
2 stalks Green onions
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Heat a large skillet or wok over medium-high heat with half the sesame oil.
Season cubed chicken with salt and pepper, then sauté until golden and cooked through; remove and set aside.
Add the remaining oil, carrots, and peas to the pan, stir-frying until the vegetables are tender-crisp.
Stir in the minced garlic and grated ginger, cooking for 30 seconds until fragrant.
Push vegetables to the side, crack the eggs into the pan, and scramble until just set.
Add the cold cooked rice and cooked chicken back to the pan, breaking up any clumps of rice.
Pour in the tamari and toss everything together until heated through and well-coated.
Garnish with sliced green onions before serving.
