Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon served over a creamy garlic cauliflower mash with tender steamed asparagus, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7.5 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Asparagus spears
0.5 tbsp Ghee
2 cloves Garlic
1 tbsp Lemon juice
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Transfer the steamed cauliflower and garlic to a blender or food processor, add half of the ghee, and blend until completely smooth and creamy.
Steam the asparagus spears for 3-5 minutes until they are bright green and tender-crisp, then set aside.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the remaining ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Plate the garlic cauliflower mash, top with the seared salmon, and serve the asparagus on the side with a fresh squeeze of lemon juice.
