Classic Beef Burger with Caramelized Onions
Pan-seared lean beef patty topped with sweet, slow-cooked caramelized onions and peppery arugula on a toasted whole grain bun.
INGREDIENTS
7.75 oz ground beef (93% lean)
0.5 medium yellow onion
0.5 tsp extra virgin olive oil
0.25 tsp sea salt
0.25 tsp black pepper
0.5 whole whole wheat burger bun
1 tbsp dijon mustard
0.5 cup baby arugula
PREPARATION
Thinly slice the yellow onion into half-moons.
Heat the olive oil in a non-stick skillet over medium-low heat. Add the onions and cook, stirring occasionally, for 15-20 minutes until they are soft and golden brown.
While onions cook, gently form the ground beef into one large, thick patty. Season both sides evenly with sea salt and black pepper.
Increase the heat to medium-high in a separate cast-iron or stainless steel skillet. Once hot, sear the beef patty for 4-5 minutes per side for medium doneness.
During the last minute of cooking, split the whole wheat bun and place it face down in the skillet to lightly toast until golden.
Spread the Dijon mustard on the bottom half of the toasted bun.
Place the cooked beef patty on the bun, top with the caramelized onions and baby arugula, then finish with the top bun.
