Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over a creamy sweet potato mash with garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
5.25 oz Salmon Fillet
80g Sweet Potato
1 cup Green Beans
0.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and dice the sweet potato, then boil or steam until tender, about 10-12 minutes.
Drain the sweet potato and mash until smooth, seasoning with a pinch of sea salt.
While the potato cooks, heat a non-stick skillet over medium-high heat with half of the olive oil.
Season the salmon fillet with salt and pepper, then sear for 4-5 minutes per side until the edges are crisp and the center is cooked through.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining oil, minced garlic, and green beans.
Sauté the green beans for 3-5 minutes until tender-crisp and fragrant.
Plate the sweet potato mash, top with the seared salmon, and serve the garlic green beans on the side.
