Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with tender steamed green beans and creamy garlic mashed cauliflower, finished with a squeeze of bright lemon.
INGREDIENTS
7 ounces Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Green Beans
1 teaspoon Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until they are tender-crisp and bright green.
Transfer the steamed cauliflower to a bowl and mash thoroughly with the minced garlic and a pinch of sea salt until the texture is smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a little salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the hot pan and sear for 4 to 5 minutes per side until the skin is golden and crisp and the fish flakes easily with a fork.
Serve the seared salmon immediately alongside the garlic mashed cauliflower and steamed green beans.
