6.5 oz Sockeye Salmon fillet
1.25 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Ghee
1 clove Garlic, minced

PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, trim the woody ends off the asparagus and steam them for 4-5 minutes until tender-crisp and bright green.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes until skin is crispy.
Flip the salmon and cook for an additional 2-3 minutes until desired doneness is reached, then remove from heat.
Transfer steamed cauliflower to a bowl or blender. Add the remaining ghee, minced garlic, and a splash of water if needed. Mash or blend until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the asparagus on the side.
