Preheat your oven to 375°F (190°C).
Bring a medium pot of salted water to a boil and cook the chickpea penne for about 7 minutes until al dente, then drain and set aside.
In a large oven-safe skillet over medium-high heat, add the ground beef and diced yellow onion, breaking the meat apart with a wooden spoon.
Cook until the beef is thoroughly browned and the onions have softened and become translucent.
Add the minced garlic, dried oregano, sea salt, and black pepper to the skillet, stirring for 60 seconds until the spices are fragrant.
Pour in the tomato puree and add the fresh spinach, stirring constantly until the spinach is completely wilted into the sauce.
Add the cooked chickpea penne to the skillet and toss well to ensure every noodle is coated in the beef and tomato mixture.
Level the mixture with a spoon and sprinkle the parmesan cheese evenly across the top.
Place the skillet in the oven and bake for 10 to 12 minutes until the cheese is melted and the sauce is bubbling around the edges.
Remove from the oven and let it rest for 5 minutes before serving to allow the flavors to meld.
