Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon served over garlic cauliflower mash and steamed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6 ounces Wild Atlantic Salmon
2 cups Cauliflower florets
1/4 cup Nonfat Plain Greek Yogurt
1 cup Green Beans
1 teaspoon Avocado Oil
1 teaspoon Ghee
1 clove Garlic, minced
1/2 Lemon, juiced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
Add the green beans to the steamer for the last 5 minutes of the cauliflower cooking time until they are bright green and crisp-tender.
While the vegetables steam, pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is crispy, then flip and cook for another 2 to 3 minutes until desired doneness.
In a food processor or using an immersion blender, combine the steamed cauliflower, Greek yogurt, ghee, and minced garlic, blending until the mash is smooth and creamy.
Plate the cauliflower mash and top with the seared salmon, serving the steamed green beans on the side with a fresh squeeze of lemon juice over the entire dish.
