Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served with creamy cauliflower mash and garlic-sautéed green beans, finished with a bright squeeze of zesty fresh lemon.
INGREDIENTS
10.5 ounces Wild Atlantic Salmon
2 cups Cauliflower florets
1.5 cups Green Beans
1 teaspoon Extra Virgin Olive Oil
1 tablespoon Non-fat Greek Yogurt
2 cloves Garlic, minced
1 tablespoon Fresh Lemon Juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
Transfer steamed cauliflower to a food processor with Greek yogurt and a pinch of salt, then blend until silky smooth.
Heat a non-stick skillet over medium heat with half the olive oil and sauté the green beans with minced garlic for 5-7 minutes until tender-crisp.
Pat the salmon fillet dry with paper towels and season with salt and pepper.
In a separate pan, heat the remaining olive oil over medium-high heat and sear the salmon skin-side down for 4-5 minutes.
Flip the salmon and cook for another 2-3 minutes until the center is just opaque and the exterior is golden brown.
Plate the cauliflower mash and green beans alongside the salmon and finish with a bright squeeze of fresh lemon juice.
