Add the finely diced yellow onion and sauté for 5 minutes until soft and translucent.
Stir in the minced garlic and grated fresh ginger, cooking for another minute until aromatic.
Add the garam masala, turmeric, sea salt, and black pepper, stirring constantly to toast the spices without burning them.
Pour in the tomato puree and stir well to combine with the aromatics.
Add the rinsed chickpeas and the extra firm tofu that has been crumbled into bite-sized pieces.
Reduce the heat to low and simmer the curry for 10 to 12 minutes to allow the flavors to meld and the sauce to thicken.
Stir in the fresh spinach and cook for 1 minute until just wilted.
Remove the skillet from the heat and gently fold in the Greek yogurt until the sauce is creamy.
Garnish with fresh chopped cilantro and serve warm.
