Lemon-Herb Baked Cod with Asparagus
Flaky cod fillets baked with a vibrant lemon-herb rub, paired with crisp-tender asparagus for a light and zesty lunch.
INGREDIENTS
10 oz Cod fillet (283g)
1 cup Asparagus spears (134g)
1 tsp Extra virgin olive oil (5g)
1 tbsp Fresh lemon juice (15g)
0.5 tsp Lemon zest (1g)
1 clove Garlic, minced (3g)
1 tbsp Fresh parsley, chopped (4g)
0.25 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
Trim the woody ends off the asparagus spears and place them on one side of the prepared baking sheet.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, sea salt, and black pepper.
Place the cod fillet on the other side of the baking sheet and brush both the fish and the asparagus spears generously with the lemon-herb mixture.
Bake for 12-15 minutes until the cod is opaque and flakes easily with a fork, and the asparagus is tender and slightly charred.
Garnish the dish with freshly chopped parsley and an extra squeeze of lemon before serving hot.
