Seared Salmon Fillet with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon served with creamy garlic cauliflower mash and tender steamed asparagus, finished with a squeeze of zesty fresh lemon.
INGREDIENTS
8 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
During the last 4 minutes of steaming the cauliflower, add the asparagus spears to the steamer basket until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
Transfer the steamed cauliflower to a bowl or food processor, add the minced garlic and half the lemon juice, and blend until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the asparagus on the side with a final drizzle of lemon juice.
