Sesame Tofu and Vegetable Stir-Fry
Extra-firm tofu pan-seared until golden and tossed with crisp broccoli and edamame in a savory, toasted sesame glaze.
INGREDIENTS
6 oz Extra-firm tofu
0.5 cup Shelled edamame
1 cup Broccoli florets
0.5 cup Red bell pepper
0.5 tbsp Hemp seeds
0.25 tsp Toasted sesame oil
1 tbsp Tamari
1 tsp Rice vinegar
0.5 tsp Garlic powder
0.5 tsp Ground ginger
0.25 tsp Red pepper flakes
0.5 tsp Sesame seeds
PREPARATION
Drain and press the extra-firm tofu for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
In a small bowl, whisk together the tamari, rice vinegar, garlic powder, ground ginger, and red pepper flakes to create the stir-fry sauce.
Heat the toasted sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes to the skillet and sear for 8-10 minutes, turning occasionally until all sides are golden and crisp.
Toss in the broccoli florets and sliced red bell peppers, sautéing for 5 minutes until the vegetables are tender-crisp.
Stir in the shelled edamame and pour the sauce over the mixture, tossing well to coat everything evenly.
Cook for another 2 minutes until the sauce thickens slightly and everything is heated through.
Remove from heat and sprinkle with hemp seeds and sesame seeds before serving.
