Seared Salmon with Steamed Green Beans and Mashed Sweet Potato
Pan-seared salmon served with creamy mashed sweet potatoes and tender steamed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
7 oz Salmon Fillet
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
1 clove Garlic, minced
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until tender.
While potatoes boil, place green beans in a steamer basket over simmering water for 5-7 minutes until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet, skin-side down, and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until cooked through to your preference.
Drain the sweet potatoes and mash them thoroughly with the minced garlic and a splash of the lemon juice.
Serve the seared salmon alongside the mashed sweet potatoes and steamed green beans, drizzling any remaining lemon juice over the fish.
