Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared wild salmon paired with garlicky green beans and creamy mashed sweet potato, finished with a bright, citrusy zing.
INGREDIENTS
5.6 oz Wild Atlantic Salmon
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place the cubed sweet potato in a pot of water and bring to a boil, cooking for 10-12 minutes until tender.
Drain the sweet potatoes and mash them in a bowl until smooth, adding a pinch of sea salt if desired.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side up.
Sear the salmon for 4-5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
Remove the salmon from the pan and set aside.
Add the remaining oil to the same skillet along with the green beans and minced garlic.
Sauté the green beans for 3-5 minutes until they are tender-crisp and the garlic is fragrant.
Plate the seared salmon alongside the sweet potato mash and garlic green beans, finishing with a squeeze of fresh lemon.
