Truffle Mushroom Tagliatelle with Parmesan
Pan-seared chicken and earthy mushrooms tossed with al dente tagliatelle in a fragrant truffle-infused sauce, finished with a dusting of sharp, nutty parmesan.
INGREDIENTS
5 oz Chicken breast
1.5 oz Tagliatelle pasta
1 cup Cremini mushrooms
1 tsp Truffle oil
2 tbsp Parmesan cheese
1 clove Garlic
1 tbsp Shallot
0.25 cup Chicken broth
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Olive oil
PREPARATION
Bring a pot of salted water to a boil and cook the tagliatelle until al dente, reserving a tablespoon of pasta water before draining.
Season the chicken breast with half of the sea salt and black pepper, then sear in a pan with olive oil over medium-high heat until cooked through.
Remove the chicken to rest and slice into thin strips.
In the same pan, sauté the sliced mushrooms and minced shallots until the mushrooms are golden and the moisture has evaporated.
Add the minced garlic and cook for 30 seconds until fragrant, then deglaze the pan with chicken broth.
Add the cooked pasta and sliced chicken back to the pan, tossing with the remaining salt, pepper, and reserved pasta water to create a light sauce.
Remove from heat and drizzle with truffle oil, then garnish with freshly grated parmesan cheese before serving.
