Rinse the white rice under cold water until the water runs clear.
In a small saucepan, combine the rice, chicken broth, diced carrots, and chopped green beans. Bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover with a tight-fitting lid, and simmer for 12 minutes.
Add the broccoli florets, green peas, and sweet corn on top of the rice. Replace the lid and continue to steam for another 5-8 minutes until the rice is tender and the liquid is fully absorbed.
While the rice is cooking, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Place the salmon in the pan and sear for 4-5 minutes until the exterior is golden and crispy.
Carefully flip the salmon and cook for an additional 3-4 minutes, or until the fish reaches your desired level of doneness.
Fluff the vegetable rice with a fork, then stir in the sliced green onions and lemon juice.
Portion the garden vegetable rice onto a plate and top with the pan-seared salmon fillet.
