Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared wild salmon served over a velvety cauliflower mash with tender steamed asparagus, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Wild Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
2 tsp Ghee
1 tsp Garlic Powder
Salt and black pepper to taste
1 Lemon wedge
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, season the salmon fillet with salt, pepper, and half of the garlic powder.
Heat one teaspoon of ghee in a non-stick skillet over medium-high heat.
Place salmon skin-side down in the skillet and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until desired doneness.
Add asparagus to the steamer basket during the last 4 minutes of the cauliflower's cooking time until bright green and tender-crisp.
Transfer the steamed cauliflower to a blender or food processor with the remaining teaspoon of ghee, remaining garlic powder, and a pinch of salt; blend until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve alongside the steamed asparagus with a fresh lemon wedge.
