In a blender or food processor, combine the fresh mango chunks, apple cider vinegar, ground ginger, and honey. Pulse until the mixture is a smooth glaze.
Place the chicken breast on the baking sheet alongside the vegetables. Brush the chicken generously with the mango glaze and drizzle the remaining olive oil over the vegetables.
Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender and slightly caramelized.
While the chicken rests for 5 minutes, warm the pre-cooked quinoa in a small pan or microwave.
Slice the chicken into strips and serve over the fluffy quinoa, surrounded by the roasted vegetables. Drizzle any remaining pan juices or extra mango glaze over the top.
