Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over creamy garlic cauliflower mash with tender steamed asparagus, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
200g Cauliflower Florets
100g Asparagus Spears
1 tsp Extra Virgin Olive Oil
1 tsp Grass-fed Ghee
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the woody ends off the asparagus and set aside.
Transfer the steamed cauliflower to a food processor or bowl; add the ghee, minced garlic, and a pinch of sea salt, then blend or mash until creamy.
Steam the asparagus for 3-5 minutes until bright green and tender-crisp.
Pat the salmon fillet completely dry with paper towels and season both sides with sea salt and black pepper.
Heat olive oil in a stainless steel or cast iron skillet over medium-high heat until shimmering.
Place salmon in the pan skin-side down and press gently with a spatula for 30 seconds to ensure even contact.
Sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness is reached.
Plate the garlic cauliflower mash, top with the seared salmon, and serve with the steamed asparagus and a fresh squeeze of lemon juice.
