INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat one teaspoon of ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add the remaining teaspoon of ghee, and mash or blend until smooth and creamy.
Serve the seared salmon alongside the garlic mashed cauliflower and steamed green beans.
