Seared Sirloin with Garlic Green Beans and Cauliflower Mash
Pan-seared sirloin steak served over a bed of creamy cauliflower mash with garlic-sautéed green beans and a finish of flaky sea salt.
INGREDIENTS
6.5 ounces Sirloin Steak
2 cups Cauliflower Florets
1.5 cups Green Beans
1 teaspoon Ghee
1 teaspoon Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, approximately 10 to 12 minutes.
While the cauliflower steams, pat the sirloin steak dry with a paper towel and season both sides with sea salt and cracked black pepper.
Heat a cast-iron skillet over medium-high heat with the olive oil until shimmering.
Place the steak in the hot skillet and sear for 3 to 4 minutes per side for medium-rare, then remove from the pan and let it rest on a cutting board.
In the same skillet, add the minced garlic and green beans, sautéing for 4 to 5 minutes until the beans are bright green and slightly blistered.
Drain the steamed cauliflower and transfer it to a blender or food processor with the ghee, blending until completely smooth and creamy.
Slice the rested steak against the grain and serve alongside the warm cauliflower mash and garlic beans.
