Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet paired with garlicky green beans and a dollop of creamy sweet potato mash.
INGREDIENTS
5.5 oz Salmon Fillet
150g Sweet Potato
1 cup Green Beans
1 clove Garlic
1 tsp Avocado Oil
1 tsp Ghee
PREPARATION
Peel and cube the sweet potato, then boil in water for 12-15 minutes until tender.
Drain the sweet potato and mash thoroughly with the ghee and a pinch of sea salt.
Heat the avocado oil in a cast-iron or non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the pan skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
Remove the salmon from the pan and set aside to rest.
In the same pan, add the green beans and minced garlic, sautéing for 3-4 minutes until tender-crisp.
Plate the salmon alongside the sweet potato mash and green beans, finishing with a squeeze of fresh lemon if desired.
