INGREDIENTS
4 tbsp Almond Flour
2 tsp Coconut Oil, melted
120g Non-fat Greek Yogurt
12g Vanilla Whey Protein Isolate
1 large Egg White
100g Fresh Blueberries
1 tsp Monk Fruit Sweetener (optional)
PREPARATION
Preheat your oven to 350°F (175°C).
In a small bowl, combine the almond flour and melted coconut oil until it reaches a sandy consistency.
Press the almond mixture firmly into the bottom of a 4-inch mini springform pan or a large oven-safe ramekin.
In a medium mixing bowl, whisk together the Greek yogurt, vanilla protein powder, egg white, and monk fruit sweetener until the batter is completely smooth and lump-free.
Pour the cheesecake filling over the crust and smooth the top with a spatula.
Bake for 22-25 minutes until the edges are firm and slightly golden, but the center still has a very slight jiggle.
Remove from the oven and let it cool at room temperature for 30 minutes.
