Baked Lemon Herb Salmon with Asparagus
Oven-roasted salmon fillets topped with a zesty lemon-herb crust and served alongside tender, snap-crisp asparagus spears for a vibrant midday meal.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus
0.5 tbsp Extra virgin olive oil
1 tbsp Fresh parsley
1 tsp Dried oregano
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper.
Trim the woody ends from the asparagus and place them on one side of the tray.
Pat the salmon fillet dry with a paper towel and place it on the other side of the sheet.
In a small bowl, whisk together the olive oil, dried oregano, garlic powder, sea salt, and black pepper.
Brush the herb oil mixture over the salmon and the asparagus, tossing the vegetables to coat evenly.
Place thin lemon slices on top of the salmon and sprinkle the fresh parsley over the entire tray.
Bake for 12 to 15 minutes until the salmon is opaque and flakes easily with a fork and the asparagus is tender.
