Preheat your oven to 375°F and lightly grease a small individual baking dish.
Cook the whole wheat lasagna noodle in boiling water according to package directions until al dente, then drain and set aside.
In a skillet over medium heat, add the olive oil and brown the ground turkey, breaking it up with a spatula.
Season the turkey with Italian seasoning, fennel seeds, sea salt, and black pepper, stirring until the meat is fully cooked.
Pour the marinara sauce into the skillet with the turkey and simmer on low for 5 minutes to meld the flavors.
In a small mixing bowl, combine the part-skim ricotta cheese, liquid egg whites, and chopped baby spinach until well incorporated.
Cut the cooked lasagna noodle into three or four equal pieces to fit the dimensions of your baking dish.
Spread a thin layer of the meat sauce on the bottom of the dish, followed by a piece of the noodle.
Spread half of the ricotta and spinach mixture over the noodle, then top with another layer of meat sauce.
Repeat the layers, finishing with a final piece of noodle topped with the remaining meat sauce.
Sprinkle the shredded mozzarella and grated parmesan cheese evenly over the top.
Bake for 20 to 25 minutes until the sauce is bubbling and the cheese has turned a beautiful golden brown.
