Gnocchi with Sage Butter Sauce and Seared Chicken
Pan-seared chicken and pillowy potato gnocchi tossed in a fragrant brown butter and sage sauce for a comforting, velvety finish.
INGREDIENTS
5 oz Chicken breast
0.5 cup Potato gnocchi
0.5 tbsp Ghee
1 cup Fresh spinach
6 leaf Fresh sage
1 tbsp Grated parmesan cheese
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Garlic
PREPARATION
Bring a pot of salted water to a boil and cook the gnocchi until they float to the surface, then drain and set aside.
Season the chicken breast with half of the sea salt and black pepper.
Heat a skillet over medium-high heat with a light spray of oil and sear the chicken until cooked through, then slice into bite-sized pieces.
In the same skillet, melt the ghee over medium heat until it begins to foam and turn slightly golden.
Add the fresh sage leaves and minced garlic to the ghee, sautéing for 1 minute until the sage is crisp and fragrant.
Toss the cooked gnocchi and sliced chicken into the skillet, coating them thoroughly in the sage butter.
Stir in the fresh spinach and cook until just wilted.
Season with the remaining salt and pepper, then serve topped with grated parmesan cheese.
