INGREDIENTS
6 oz Grass-fed sirloin steak
1 tbsp Ghee
1 cup Asparagus spears
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides generously with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add half of the ghee.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare.
During the last 2 minutes of cooking, add the remaining ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan and spoon the melted herb ghee over the steak repeatedly to infuse flavor.
Remove the steak to a plate to rest for 5 minutes.
In the same skillet, toss the asparagus in the remaining herb ghee and sauté for 3-4 minutes until tender-crisp.
Slice the steak against the grain and serve with the sautéed asparagus.
