PREPARATION
Thinly slice the chicken breast into strips and chop the bell pepper and red onion into small pieces.
Heat the olive oil in a non-stick skillet over medium-high heat. Add the chicken strips and season with sea salt, black pepper, cumin, and garlic powder.
Sauté the chicken for 5-6 minutes until cooked through and slightly browned. Remove the chicken from the pan and set aside.
In the same skillet, add the bell peppers and onions, sautéing for 3-4 minutes until they are tender and slightly caramelized.
Wipe the skillet clean and place the whole wheat tortilla in the pan over medium heat.
