Salmon Sushi Rice Bowl with Avocado
Pan-seared salmon fillets served over a bed of seasoned rice with creamy avocado and crisp cucumbers for a refreshing, nutrient-dense bowl.
INGREDIENTS
6.5 oz salmon fillet
0.25 cup cooked white sushi rice
0.2 whole avocado
0.5 cup cucumber
2 whole radishes
1 tbsp coconut aminos
1 tsp rice vinegar
0.5 tsp toasted sesame oil
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp avocado oil
1 tsp sesame seeds
1 sheet nori
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes per side until the skin is crispy and the fish is cooked to your liking.
While the salmon cooks, whisk together the coconut aminos, rice vinegar, and toasted sesame oil in a small bowl to create the dressing.
Place the warm cooked rice in the bottom of a serving bowl and drizzle with half of the prepared dressing.
Flake the cooked salmon into large pieces and arrange them on top of the rice.
Add the sliced avocado, thinly sliced cucumber, and sliced radishes to the bowl.
Cut the nori sheet into thin strips and scatter them over the top along with the sesame seeds.
Drizzle the remaining dressing over the entire bowl and serve immediately.
