9 oz Salmon Fillet
2 cups Cauliflower florets
150g Asparagus spears
2 tsp Extra Virgin Olive Oil
2 tbsp Non-Fat Greek Yogurt
PREPARATION
Preheat your oven to 400°F (200°C).
Trim the woody ends off the asparagus and place them on a baking sheet, tossing with one teaspoon of olive oil and a pinch of salt.
Roast the asparagus for 12 to 15 minutes until tender and slightly charred.
While the asparagus roasts, steam the cauliflower florets until they are very soft, approximately 10 minutes.
Transfer the steamed cauliflower to a blender or food processor with the Greek yogurt and pulse until completely smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crisp.
Flip the salmon and cook for an additional 2 to 3 minutes until your desired level of doneness is reached.
