7 oz Salmon fillet
0.25 tbsp Ghee
1 tbsp Minced garlic
2 cup Baby spinach
2 tbsp Plain Greek yogurt

PREPARATION
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat a large cast-iron skillet over medium-high heat and add half of the ghee.
Once the ghee is shimmering, place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 3 minutes, then remove from the pan and set aside on a plate.
In the same pan, reduce heat to medium and add the remaining ghee and minced garlic, sautéing for 1 minute until fragrant.
Add the baby spinach to the pan in batches, tossing constantly until all leaves are wilted and tender.
Turn the heat to low and stir in the Greek yogurt, nutmeg, and lemon juice, mixing until a creamy sauce forms around the spinach.
Place the salmon back on top of the creamed spinach to warm through for 1 minute and serve immediately.
