2.5 scoops chocolate whey-casein protein powder
2 tbsp unsweetened cocoa powder
0.25 cup liquid egg whites
0.25 cup fresh mint leaves
0.25 cup granulated monk fruit sweetener

PREPARATION
Preheat oven to 325°F and line a baking sheet with parchment paper.
Finely mince the fresh mint leaves and muddle them into the monk fruit sweetener until the sugar is fragrant and green-tinted.
In a medium bowl, whisk together 2 scoops of the protein powder, 1 tablespoon of cocoa powder, and the sea salt.
Stir in the egg whites and the mint-infused sweetener until a smooth, thick batter forms.
Drop the batter by the tablespoon onto the baking sheet and use the back of a spoon to spread each into a very thin 2-inch disk.
Bake for 10-12 minutes until the edges are firm and the centers are dry; let them cool completely on the pan to reach maximum crunch.
