130g Sweet Potato, peeled and cubed
125g Fresh Green Beans, trimmed
1.5 tsp Extra Virgin Olive Oil

Pinch of Sea Salt and Black Pepper
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash them until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until golden brown.
Flip the salmon and cook for another 3-4 minutes until cooked through, then remove from the pan and set aside.
In the same skillet, add the remaining oil, green beans, and minced garlic.
