Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Scrub the Russet potato thoroughly and pat dry. Pierce the skin several times with a fork to allow steam to escape.
Rub the potato with half of the olive oil and a pinch of sea salt. Place it on the baking sheet and bake for 45-60 minutes until the skin is crisp and the inside is tender.
While the potato is baking, heat the remaining olive oil in a non-stick skillet over medium-high heat.
Add the ground turkey to the skillet, breaking it up with a spatula. Season with the remaining sea salt, black pepper, garlic powder, and onion powder.
Cook the turkey until it is browned and cooked through, about 7-10 minutes. Set aside and keep warm.
Once the potato is done, remove it from the oven and carefully slice it open lengthwise. Use a fork to fluff the interior flesh.
Stuff the seasoned ground turkey into the potato and sprinkle with the shredded sharp cheddar cheese while the potato is still hot so it melts.
Top with a generous dollop of nonfat Greek yogurt as a clean substitute for sour cream.
Garnish with freshly chopped chives and serve immediately.
