Crispy Almond-Crust Chicken Parmesan
Golden pan-seared chicken breast coated in a nutty almond-parmesan crust, topped with zesty marinara and melty mozzarella for a satisfyingly crunchy finish.
INGREDIENTS
4.5 oz Chicken breast
1.5 tbsp Almond flour
1 tbsp Grated parmesan cheese
0.25 tsp Garlic powder
0.25 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Whisked egg
2 tsp Extra virgin olive oil
0.25 cup Marinara sauce
0.75 oz Shredded mozzarella cheese
1 tsp Fresh basil
PREPARATION
Preheat your oven to 400°F (200°C).
Place the chicken breast between two sheets of parchment paper and pound with a meat mallet until it is an even half-inch thickness.
In a shallow bowl, whisk together the almond flour, grated parmesan, garlic powder, oregano, sea salt, and black pepper.
Place the whisked egg in a separate shallow bowl. Dip the chicken into the egg, then dredge it through the almond flour mixture, pressing firmly to ensure the crust adheres.
Heat the olive oil in a medium oven-safe skillet over medium-high heat. Once shimmering, add the chicken and sear for 3 minutes per side until the coating is golden brown.
Spoon the marinara sauce over the center of the chicken and sprinkle evenly with the shredded mozzarella.
Transfer the skillet to the oven and bake for 5 to 7 minutes, or until the chicken is cooked through and the cheese is bubbly and melted.
Remove from the oven and let rest for 2 minutes before garnishing with thinly sliced fresh basil.
