180g Sweet Potato
1 cup Green Beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
1 tsp Lemon Juice
PREPARATION
Peel and chop the sweet potato into small chunks then boil in water until fork-tender.
Drain the sweet potatoes and mash them until smooth, adding a pinch of sea salt and a teaspoon of the olive oil for creaminess.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat half of the remaining olive oil in a non-stick skillet over medium-high heat and place the salmon skin-side down.
Sear the salmon for about 4-5 minutes until the skin is golden and crispy, then flip and cook for another 2-3 minutes.
Remove the salmon from the pan and add the rest of the olive oil along with the trimmed green beans and minced garlic.
Sauté the green beans for 5 minutes until tender-crisp and fragrant.
Plate the salmon alongside the sweet potato mash and green beans, finishing with a fresh squeeze of lemon juice.
