Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Scrub the Russet potato clean, prick it several times with a fork, and rub the skin with olive oil and a pinch of sea salt.
Place the potato on the baking sheet and roast for 45-60 minutes until the skin is crisp and the center is tender.
While the potato roasts, heat a non-stick skillet over medium-high heat and add the ground turkey.
Season the turkey with garlic powder, onion powder, the remaining sea salt, and black pepper, breaking it up with a spatula until fully browned.
Steam the broccoli florets for 3-5 minutes until they are bright green and fork-tender.
Once the potato is finished, slice it down the center and fluff the inside with a fork.
Stuff the potato with the cooked ground turkey and steamed broccoli florets.
Garnish with a dollop of plain Greek yogurt and a sprinkle of sliced green onions before serving.
