Dip the chicken into the egg whites, letting the excess drip off, then press firmly into the almond flour mixture to coat both sides.
Place the chicken on the prepared baking sheet, drizzle with olive oil, and bake for 15 minutes.
Remove the tray, spoon the marinara sauce over the chicken, and top with mozzarella and parmesan.
Bake for another 5-7 minutes until the cheese is bubbly and golden.
While chicken finishes, spiralize the zucchini and lightly sauté in a non-stick pan for 2-3 minutes until just tender.
Serve the crispy chicken over the zucchini noodles.
