6 oz Top Sirloin Steak
120g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
2 tsp Ghee
1/2 tbsp Slivered Almonds
1 clove Garlic, minced
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook until tender, about 10-12 minutes.
Drain the sweet potatoes and mash them with 1 teaspoon of ghee and a pinch of sea salt until smooth.
While potatoes boil, season the sirloin steak generously with salt and black pepper.
Heat a cast-iron skillet over medium-high heat with the remaining 1 teaspoon of ghee.
Sear the steak for 3-4 minutes per side for medium-rare, then remove from the pan and let it rest for 5 minutes.
In the same skillet, add the green beans and a splash of water, covering for 2 minutes to steam-soften.
