Classic Beef Stroganoff with Egg Noodles
Tender sirloin strips sautéed with earthy cremini mushrooms and onions in a velvety, protein-rich Greek yogurt sauce served over al dente egg noodles.
INGREDIENTS
5 oz Sirloin steak
0.5 cup Egg noodles
1 tsp Extra virgin olive oil
1 cup Cremini mushrooms
0.25 cup Yellow onion
1 clove Garlic
0.5 cup Beef broth
0.25 cup Plain Greek yogurt
1 tsp Dijon mustard
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Bring a large pot of water to a boil and cook the egg noodles until al dente, then drain and set aside.
Slice the sirloin steak into thin strips and season evenly with sea salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat and sear the beef strips until browned on all sides, then remove from the pan.
In the same skillet, add the sliced mushrooms and diced onions, sautéing until the mushrooms are golden and the onions are translucent.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Pour in the beef broth and Dijon mustard, using a wooden spoon to scrape up the browned bits from the bottom of the pan.
Reduce the heat to low and whisk in the Greek yogurt until the sauce is smooth and creamy.
Return the beef to the skillet and toss with the cooked egg noodles until well coated.
Garnish with freshly chopped parsley and serve immediately.
